The best way you can do this, hand wash and dry all kitchenware after use. Avoid putting them in the dishwasher and do not leave them to sit in a sink full of dirty water. The more use a tool sees, the better!
Copper and brass age naturally with time, and will form a lovely patina. If you prefer a more polished look, there are various natural methods to clean the surface and leave it looking shiny and new. One of the easiest ways is to cut a lemon in half, dip it in some table salt, and use that to scrub your copper until it sparkles. Wash with warm soapy water, rinse and dry throughly.
Firepokers and other mild steel products are sealed with a beeswax wax/oil mixture - this helps to protect the steel, and prevent rusting. Cleaning and applying a coat of something similar once a year will help to maintain and preserve the steel. Carnauba/beeswax mixtures are easy to find at your local hardware store.
